MONA Fresh Italian Food is a unique concept combining the swiftness of a fast-casual restaurant with the sophistication of upscale surroundings and high-quality food. MONA uses fresh, local products in a warm and cozy environment offered in their natural forms sourced from locally owned farms.
The five-step menu starts with the base (house made fettuccini, bruschetta, chopped salad), topped with fresh veggies, cheeses and garnishes. Guests can choose to upgrade with multiple protein options and customize their entrées with homemade sauces, dressings and seasonings. Tomato plants grown in the restaurant are used fresh off the vine and added to dishes the same day. Organic herb gardens of basil and microgreens can be found at the end of the line for customers to cut fresh for added flavor to their newly created dishes.

Sidney Degaine was born in Côte d’Azur in South of France specializing in Mediterranean cuisine influenced by the coasts of the South of France and Southern Italy. He opened his first fast-casual restaurant with MONA Fresh Italian Food in West Houston in 2018.
After working 15 years in fine dining restaurants, Chef Degaine developed a strong desire to create a counter service restaurant to provide a casual spot for a quick sit down meal, as well as grab-and-go service. He believes all patrons dining with him should be surrounded by a comfortable environment, high quality food and great hospitality.
Degaine strives to use ingredients in their most basic, natural forms to be carefully incorporated into every dish. According to Chef Degaine, “With a fast-casual concept, we can touch many more guests and make a difference in so many people lives”.
